JEFFREY PERISHOSOMMELIER & WINE DIRECTOR
Jeffrey began his interest in wine as an undergraduate at USC and took the opportunity to join The Plumed Horse in 2008. During his time, he resurrected the cellars to Wine Spectator Grand Award status, currently one of 94 in the world. Though he would cite passing the Advanced Sommelier Exam as one of his favorite achievements, he believes that pouring Riesling, neglecting to manicure his beard, and cheering on the Giants are much more important.

Chris Ward, a certified sommelier since 2014, has curated wine programs for top South Bay restaurants and consulted on private collections. As Bar Manager at The Plumed Horse, he brings his cocktail expertise and passion to our historic venue. In 2024, Chris earned 2nd in the U.S. Regionals and 6th globally at the No.3 Gin Unrivaled Classics Competition in Europe! Come experience his award-winning cocktails at The Bar at TPH.

MANUEL URBANOSOMMELIER, MAITRE’D & ICONIC PRESENCE
Manuel, or Manny as we know him, joined The Plumed Horse in 1988, and has been the face of the dining room since his start. Anyone who has dined with us will know Manny from his poise, sense of humor, and desire to please. Perhaps the most expert on Bordeaux in the Bay Area, he loves sharing his knowledge and stories on a nightly basis.

ANTONIO MENDOZALEAD SOMMELIER
Born in El Salvador, Antonio grew up in San Francisco, where he discovered his passion for wine. Having built wine programs throughout the peninsula, Antonio joined the team at The Plumed Horse in October 2022 and was named Lead Sommelier of the team months later. Though his love for old-world wines is strong, he would say that the Napa Valley is home to his favorite wines and producers.

Chef Peter Armellino

CHEF PETER ARMELLINO

OVER 35 YEARS OF CULINARY EXPERTISE

Chef Peter Armellino began cooking professionally at the age of 17 on Long Island, New York. Growing up in rural Suffolk County, he was surrounded by farmland and top-notch seafood, all greatly influencing his love of food and cooking. 

In the early 90s, Armellino made his move to New York City. Over the next decade, he honed his craft working in some of New York City’s finest restaurants, including the Gramercy Tavern. This was followed by what he describes as a life changing trip throughout Europe where he dined at Michelin star restaurants from Paris to the Alps. A trip he describes as a master class and finishing school in fine dining. After returning he decided to challenge himself with another move, heading west to the Bay Area, the mecca of California cuisine. He began working alongside Chef Laurent Manrique, first at Campton Place and then later at Aqua restaurant as Chef de Cuisine. 

In 2008, enter The Plumed Horse. In that year the restaurant underwent a multimillion-dollar transformation that created a modern stage for Chef Peter Armellino’s contemporary California-inspired menu. He continues to present elegant, ever-evolving, modern California Cuisine, emphasizing food that is fresh, seasonal and sustainably produced. 

He has been featured on the Food Network and frequently appears at national culinary events such as Hawaii Food & Wine. Like many other well-known chefs, he dedicates time to causes that matter to him, including Meals on Wheels and Tibetan Aid Relief. 

The Plumed Horse, under Chef Armellino’s direction, with its quintessentially California cuisine, has been awarded a coveted Michelin Star consecutively each year since 2009.
